Sausage and Spinach Pie

A couple of weeks ago I was searching in the three editions of the Joy of Cooking I have (which my mom and Geeg simply called Rombauer) for drawings of squirrels. Apparently if you have the editions that have the legendary squirrel drawings, you have somewhat of a collector’s item. Hmmm…not sure about that because only two of mine have the drawings in it…

…but my oldest edition from 1946 does not. I would have thought for sure that the oldest edition would have included it but what do I know! I bet some of you are running to your cookbooks right now to see what edition you have and if the squirrel…and rabbit…are in there. What you probably won’t find is this clipping which fell out of the 1946 edition when I was looking through it. Who knows how long it’s been in there. 

Mrs. C’s Sausage and Spinach Pie

It is really similar to the Italian Nettle and Sausage Pie which I created with Langdon Cook and included in my book. Since Mrs. C’s uses spinach and the nettles can easily be swapped out with spinach, I think it just might be time to make one.
