Easiest Lemonade Ever
We’re having a heat wave. Now don’t laugh but for me hot begins at anything over 60F. I know that you probably are laughing. It’s ok. I can take it really. I jokingly say in my classes that I can tell when it gets to be 61F because I feel like I need some air conditioning and that’s something we just don’t have in the Pacific Northwest. But our environment really does effect our pie dough…
- melting fats (butter starts melting at 59F)
- hot bright lights (keep them off until you need them)
- preheated oven (start the preheat AFTER the pie is made and chilling in the fridge)
- extra people in the kitchen (each person adds 5 degrees in my classes)
- warm hands (oh this is a big one! If it’s really hot, grate frozen butter into the bowl.)
All of those little hot things add up and can contribute to pie dough that is more of a short pastry or hard to roll out. All of those cool things can help with an easy roll.
But in addition to keeping our doughs chilly, it’s important for us all to stay well hydrated when we are working in the kitchen especially during the hot weather that I am seeing all over…well, the world!
One way I stay cool is to drink lots of lemonade. Sometimes I make it right at the table when I am teaching. Here’s one of the easiest ways to make it ever!
- Refill your ice water glass with water and more ice.
- Squeeze the juice of half a lemon or more into it and plunk the lemon in there, too.
- Spoon in a few teaspoons of sugar to your taste.
- Stir.
- If you are feeling fancy, add a sprig of mint or lemon verbena from the garden.
- And, it’s fine to pour in something a little stronger, too…just make sure you aren’t driving anywhere.
That’s it. Instant chill and the easiest lemonade ever!
