Fudgy Brownies for Two Hundred

No, I haven’t gone over the deep end with a chocolate addiction, although I do enjoy a good piece of chocolate, especially when it is from small bean to bar artisan producers. Right now I’m deep in a project that brings me great joy. Tomorrow is my god-daughter Katie’s wedding day and I’m making fudgy brownies for two hundred to be eaten at the celebration.

You’ll find the recipe for my favorite Fudgy Brownies on page 96 in Home Cooking.

In case there might be a guest with a nut allergy, I’ve left out the optional walnuts. It does take a while to make and bake two hundred brownies, but this is a very special occasion. So as not to get overwhelmed, I’ve been baking, cooling, wrapping, and freezing in batches.

Today, I’m making a rich chocolate ganache frosting to top them and will let it set up overnight. It’s super easy to make and I’ll include the recipe at the end of the post. Tomorrow, I’ll take a batch of frozen brownies out of the freezer, set it on a cutting mat, frost the brownies and smooth the top with a bench scraper.  While they are still partially frozen, I’ll carefully cut them, with a pizza cutter, into 2 inch squares. Cutting while they are frozen gives me really sharp neat edges, too.

Chocolate Ganache Frosting

An easy to make rich chocolate ganache that can be used for a frosting.

  • 12 ounces heavy whipping cream
  • 12 ounces semi-sweet chocolate chips
  1. Place the chocolate chips in a medium size bowl.

  2. Heat heavy whipping cream to a boil over medium heat. This won’t be a rolling boil, but you do need to get it hot enough so it can melt the chocolate chips.

  3. Pour hot whipping cream over the chocolate chips, let melt a bit, and then whisk until well combined.

  4. Cover with plastic wrap and let cool completely, which will take about an hour, and then let it set up to thicken. I let it set up for about four hours before spreading on top of frozen brownies.
